Chef Yamazaki was born in 1984 in Niigata, Japan. He began his career as a chef at a restaurant in Tokyo, where he worked for 10 years. After 3 years of running his own restaurant in Ebisu, he decided to travel and work in different kitchens around the world, including Mexico, Peru, London, the Faroe Islands, and San Francisco.
